It'd be really cool if you could ctrl-select multiple items (or even shift-select multiple items in a row, though this would be less useful) on the Item Details screen.

I can see how that would be a quick way to add multiple items at once.  Here is a tip that may be faster than what you may be doing.  Perhapps you have already found this trick.  When you open the item details dialog it has two buttons at the top right that are usually "Previous" and "Next".  When you are on the last item in the order the "Previous" button turns into an "Add" button.  When you click on the "Add" button it adds a new item and shows it in the dialog.  In this way you can add all the items in the order by only opening the item details dialog once.  Had you noticed that?
